Peanut Butter Date Chocolate Bars with Bee Pollen

This delicious no-bake treat was inspired by my client Michelle Banks. It combines the natural sweetness of dates, creamy peanut butter, and rich chocolate, topped with a sprinkle of bee pollen for an extra boost of nutrition.

Ingredients

  • 1 ½ cups Hu dark chocolate chips, melted (divided)
  • 1 cup soft organic Medjool dates, pitted
  • 2 tbsp warm water (if needed for blending)
  • ½ cup organic creamy peanut butter
  • 1 tbsp bee pollen

Directions

  1. Melt the Chocolate:
    In a small saucepan over low heat, melt the chocolate, stirring continuously to prevent burning. Once smooth, remove from heat.
  2. Prepare the Base:
    Line a small baking dish or tray with parchment paper. Pour half of the melted chocolate into the dish, spreading it evenly. Place in the freezer for 10 minutes to set.

  3. Make the Date Layer:
    In a food processor, blend the dates until smooth, adding a little warm water if needed to create a spreadable consistency.

  4. Layer the Filling:
    Remove the dish from the freezer. Using your hands, carefully spread the date mixture over the chocolate layer, as it may be thick and sticky. Then, gently spread the peanut butter on top of the date layer.

  5. Top with Chocolate & Bee Pollen:
    Pour the remaining melted chocolate over the peanut butter layer, ensuring it covers the surface. Sprinkle bee pollen on top.

  6. Chill & Serve:
    Place the dish back into the freezer for at least 1 hour, or until fully set. Once firm, remove from the dish and cut into bite-sized squares.

  7. Enjoy!
    Store in the fridge or freezer and enjoy as a healthy, indulgent treat.
