Ingredients

  • 1 cup Hu chocolate chips
  • 2 cups mixed dried fruit and nuts (e.g., dried dates, apricots, prunes, raisins, pecans, and cashews)
  • 1 tbsp powdered peanut butter

Directions

  1. Roughly chop any larger dried fruits (like dates, apricots, or prunes) and mix them with the nuts in a bowl. Set aside.
  2. In a small pot, add the Hu chocolate chips and melt them over low heat. Stir constantly to prevent burning.
  3. Once the chocolate is fully melted and smooth, remove from heat.
  4. Pour the melted chocolate over the mixed dried fruit and nuts. Use a spatula or spoon to gently fold the ingredients together until everything is evenly coated.
  5. Line a baking sheet with parchment paper.
  6. Drop spoonfuls of the chocolate-covered mixture onto the sheet, forming clusters, or spread it evenly for a bark-like form.
  7. Place the sheet in the fridge for about 30 minutes, or until the chocolate has fully set and hardened.
  8. Once the chocolate has hardened, sprinkle the powdered peanut butter evenly over the top of the clusters or bark.
  9. Break the bark into pieces or serve the clusters as-is. Store leftovers in an airtight container in the fridge.
